Turkey and Cauliflower Taco Bowl

Serves 4

 Ingredients

1 Tbs Olive Oil

1 cup Onion, Chopped

1/2 cup Bell Pepper, Chopped

1 lb. Turkey, 93% lean, ground

1 tsp Garlic powder

1 tsp Cumin

½ - 1 tsp Chili powder

1 tsp Paprika

1/2 tsp Oregano, dry

½ cup vegetable broth

1 cup tomato sauce

3 cup Cauliflower, Riced ~ frozen is fine

Salt and Pepper

1 Avocado, sliced Optional

2 cup Coleslaw Blend, unseasoned ( I also do on a bed of spinach)

1 Lime, Sliced into wedges

 

1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté for 5 minutes.

2. Add the ground turkey and cook until almost completely cooked. Add the garlic powder, cumin, chili powder, paprika, and oregano to the meat and continue to cook until completely cooked.

3. Add the vegetable broth and tomato sauce to the pan. Cover and simmer on low heat for ~10 minutes.

4. Uncover the pan and stir in the cauliflower rice. Cook for 5 minutes or until rice is warmed through. Season with salt and pepper to taste.

5. Prepare bowls with coleslaw blend. Spoon taco rice mixture over the slaw. Garnish with optional sliced avocado and fresh lime juice.
