Blueberry Walnut Overnight Oats

Serves 2

1/2 cup Greek yogurt, plain
1 cup oats, gluten free, if needed
1 cup almond milk, unsweetened or milk of choice
2 Tbs chia seeds
1 Tbs maple syrup
1/2 tsp vanilla extract
1 lemon, zested (for 1 tablespoon lemon zest)

1/2 tsp cinnamon
1/4 tsp nutmeg
2 Tbs walnuts, crushed for garnish
1 cup blueberries

 

  1. In a glass jar, mix yogurt, oats, milk, chia seeds, maple syrup, vanilla, spices, and lemon zest. Add the top to the jar and shake.
  2. Leave in the refrigerator overnight.
  3. Top with walnuts and blueberries.
