Breakfast Salad!

Salad for Breakfast!

Serves 4

Break away from cereal, toast, bacon and eggs and enjoy this breakfast that has flavors of salty, sweet and crunchy. It is full of vitamin C from the tomatoes and grapefruit, fiber from the apple and healthy fat from the walnuts and olive oil. Substitute other fruits/veggies to your liking and start your day off healthy!

Add more or less of each ingredient to make it uniquely yours!

2  tomatoes, sliced (Heritage tomatoes are nice for this recipe, but you can use regular if you can't find them)

2 cucumbers sliced

1 grapefruit sliced

1-2 apples sliced

¼ cup oz black olives roughly chopped

¼ cup oz feta cheese crumbled

¼ cup walnuts chopped

2 tbsp extra virgin olive oil

Layer the tomato, cucumber, grapefruit and apple on a platter and season with salt and pepper. To serve, top the salad with the olives, feta, walnuts and a drizzle of olive oil.
