Add
the parmesan cheese, egg yolk, anchovies, lemon juice, garlic, dijon mustard,
salt, and pepper to the jar of your blender or small food processor.

Pulse
3 to 5 times or until everything is smooth and combined.

Add
the olive oil and pulse another 3 to 5 times until the dressing is completely
smooth and creamy.

Taste
and adjust for seasoning, you may need to add another touch of salt, pepper, or
lemon juice.

Store
in an airtight jar in the refrigerator for up to 3 days.
