Memorial Day is a time to indulge in a feast fit for a patriot! This Memorial Day, enjoy my Lemon Ginger Chicken Salad along with a delicious Strawberry Feta Salad with a White Balsamic Vinaigrette. This vinaigrette adds a light fruity flavor to the salad. Savor these with your favorite summer recipes to make your celebration complete!
Strawberry Feta Salad with White Balsamic Vinaigrette
Preheat oven to 350 degrees F. Place the pecans into an 8x8-inch baking dish or glass pie plate. Roast for 10 minutes only (be careful as pecan can burn easily if left in the oven a few too many minutes).
Remove pecans from oven and place onto a plate or cutting board to cool. Finely chop them once they have cooled.
Place the mixed greens into a large salad bowl. Add the halved strawberries, basil leaves, crumbled feta, and chopped pecans.
Hold a small bunch of chives over the salad and use a kitchen scissors to snip them into small pieces.
To make the dressing, whisk together ingredients in a small bowl. Drizzle dressing over salad right before serving.
Recipe Note
**White Balsamic Vinegar adds a light, fruity flavor to the salad. If you can not find it, White Wine Vingegar or regular Balsamic Vinegar will work just fine.
