Pomegranate Shirley Temple

 1 cup pomegranate juice

¼ cup cane sugar or honey

3 (12 ounce) cans of lo cal ginger ale or club soda

¾ cup pomegranate seeds, divided

a small handful of mint leaves

zest of 1 lemon

ice, as needed

To make the grenadine: heat a small pan over medium-high heat and add the pomegranate juice and sugar or honey. Stir till the sugar/honey is dissolved and bring to a boil. Reduce heat to medium and let simmer for 5 minutes. Remove from heat and let cool. 

To make one drink: combine one can of low cal ginger ale or 12 ounces club soda, ¼ cup pomegranate seeds, a few mint leaves, ⅓ cup grenadine, and ice. Stir and serve immediately!
