Creamy Fruity Oatmeal

2 1/2 cups Gluten Free Oats

2 cups water

1/2 cup Raw Almonds (soaked)

1 medium Granny Smith Apple

2 medium bananas ( using overripe bananas with some brown spots will increase the sweetness) 

1. Soak almonds: Place almonds in a container and cover with water. Soak almonds in water for at least 2 hours (or overnight) in the fridge. Drain and rinse almonds and set aside.

2. Add 2 cups water to blender or vitamix. Next add oats, bananas, apple and soaked almonds. Cover and blend on high for about 1 minute, or until smooth and creamy.

3. Refrigerate until ready to eat. Will keep for up to 5 days in the fridge. Top with sliced bananas, berries, maple syrup, honey...

This oatmeal is naturally sweetened with bananas, a good source of vitamin B6, potassium and fiber. I like to leave the skin on the apple for additional fiber. Top with more bananas and berries. I find it to be plenty sweet but you may wish to add a splash of maple syrup or honey. 

The oatmeal thickens overnight in the fridge. Make a double batch and eat off of it all week for breakfast, a snack or even as a dessert!
