Kiwi Sorbet Recipe – Just Kiwi and Lime!
Servings 2 (can be doubled easily)
3 kiwis
1⁄2 tbsp lime juice
Possible additions to mix things up
a few pineapple or mango chunks -- frozen a few avocado chunks -- frozen
Peel the kiwis and slice them into rounds. Place the slices on a lined baking sheet and freeze until solid ~ 1-2 hours.
Place the frozen kiwi slices to a food processor or vitamix and add the fresh lime juice. Pulse the fruit until it reaches a creamy sorbet like consistency. Stop to scrape the sides down until nice and pureed.
Serve immediately or freeze. If freezing, thaw @ 15 minutes prior to eating. Garnish with a kiwi slice!
