Potatoes are considered a starchy vegetable and a healthy carb. They're high in fiber (when including the skin), low in calories, and include vitamins and minerals.

Directions Preheat the oven to 425 degrees.
Boil the potatoes in salted water for about 15 minutes ~
until tender. Drain and leave to cool slightly.
Put the potatoes on a baking sheet and flatten slightly with
the palm of your hand.
Mix together the parmesan, olive oil, salt, pepper, lemon
zest, and garlic and sprinkle over the potatoes.
Roast for 25 minutes or until crispy.
Sprinkle with chopped parsley or chives if desired.
