Ingredients

1⁄2 cup blueberry vinaigrette
1⁄2 cup cooked quinoa
3⁄4 cup snap peas –chopped in half
1 medium carrot ~ peeled and chopped–
handful of mixed greens
1⁄2 cup fresh blueberries
Blueberry Vinaigrette
1 cup fresh blueberries
1⁄4 cup olive oil
1⁄2 fresh lemon – juiced
3 Tbsp apple cider vinegar
1 Tbsp maple syrup or honey
pinch of salt

Directions

To make this salad, start by pouring in the dressing, adjusting the quantity to your liking. Add the remaining ingredients in the order listed.

Dressing

Add all ingredients to a blender and blend until smooth. Pour into a mason jar and drizzle over salad. This dressing is best when served fresh; within 2 days.
