Citrus Black Bean salad with Quinoa Salad

1 10-ounce package of edamame

3 cups of cooked quinoa

1 cup chopped tomatoes or half cherry tomatoes

1/4 cup of sliced scallions

1/3 a cup of chopped carrot

1 cup canned black beans, rinsed and drained

1/2 of chopped fresh basil

1/2 teaspoon of kosher salt

1/4 teaspoon of black pepper

1/3 of Citrus Vinaigrette or store bought Lemon or Greek Vinaigrette

 Cook the edamame according to the package directions.

Combine the quinoa, tomato, scallions, carrot, black beans, basil, salt, pepper, and 1 cup of edamame in a large bowl. Reserve the remaining edamame for another use. Add the dressing and stir gently to combine.


Citrus Vinaigrette

3 Tablespoons fresh Lemon Juice

6 Tablespoons extra-virgin Olive Oil or Avocado Oil

3 tablespoons fresh Orange Juice

1 tablespoon Dijon mustard

Salt to taste

Black pepper to taste
