Miso Glazed Salmon Bowl
This bowl is bursting with flavor, texture, and color, and it's ready in under 30 minutes!
4 cups cauliflower rice (cooked)
1 English cucumber, sliced
2 cups edamame, defrosted
3 carrots, peeled and shredded
6 scallions, chopped
Salmon
1½ Tbsp white miso paste
1½ Tbsp mirin
½ Tbsp rice vinegar
1½ Tbsp gluten-free soy sauce
1½ tsp maple syrup
1 tsp fresh ginger, grated
4 skinless salmon fillets (6 oz. each)
1½ tsp sesame seeds
Sriracha Sauce
1 cup low-fat Greek yogurt
2 Tbsp Sriracha
1⅔ Tbsp honey
1 clove garlic, pressed
1 Tbsp lemon juice
Salt, to taste

Whisk miso paste, mirin, vinegar, soy sauce, maple syrup, and ginger. Brush over salmon and bake until flaky
Arrange cauliflower rice, carrots, cucumber, and edamame in bowls.
Top with salmon and sprinkle with sesame seeds.
Stir together sauce ingredients and drizzle over bowl.
