Pumpkin Spice Blender Oats

Serves 1

1/2 cup oatmeal, old fashioned

1 Tbs flax meal

1/2 tsp baking powder

1 tsp pumpkin pie spice

1/4 cup pumpkin, canned

1 egg

1/4 almond milk, unsweetened (or milk of choice)

1 Tbs maple syrup

 

1.Preheat oven to 350°F.

2.Grease 8-ounce ramekin.

3.Add all ingredients to a blender and blend until smooth.

4.Pour into a greased ramekin and stir in chocolate chips

5.Place ramekin on a small baking sheet and bake for 12-15 minutes.

6.Let cool for 5-10 minutes.

7.Top with yogurt of choice, if desired
