Dark Chocolate Mousse
Serves 4
3 ½ dark chocolate (80%) roughly chopped
101/2 ounces silken tofu do not drain! you need all of the liquid to achieve the right consistency
2 tbsp maple syrup
2½ tbsp cacao powder
To serve : Flaky sea salt

1.Gather and prepare your ingredients.
2. Place the chocolate into a bowl set over a pot of simmering water. Heat, stirring occasionally, for several minutes until melted. Remove from the heat and allow to cool slightly.
3. Place into a blender with the tofu, maple syrup and cacao powder. Blend until smooth.
4. Pour into small serving glasses and place into the fridge to set for at least 45 minutes before serving. Alternatively, chill in a bowl and spoon onto plates when you are ready to serve.
5. Serve sprinkled with flaky sea salt.
