Lentil Salad with Pomegranate and Walnuts

Serves 6

Tart vinaigrette, sweet and juicy pomegranate seeds and crunchy walnuts make this a great healthy go to salad.

 

1 tablespoon olive oil

1 ½ tablespoons lemon juice

½ teaspoon salt

¼ teaspoon pepper

2 cups cooked lentils (canned, cooked from dried or air sealed)

¼ cup chopped fresh parsley

6 radishes, trimmed, halved, and sliced thin

¼ cup walnuts, toasted and coarsely chopped

½ cup pomegranate seeds, divided

Whisk oil, lemon juice, salt and pepper together in a large bowl. Add lentils, parsley, radishes, Half of walnuts, and half of pomegranate seeds to dressing and toss to combine. Season with salt and pepper to taste. Transfer to serving dish and sprinkle with remaining walnuts and pomegranate seeds.
