Mediterranean Bean Salad

Serves 6

Healthy, Fresh, and Bursting with Flavor!

 

1 15-ounce can garbanzo beans (drained and rinsed)

1 15-ounce can black beans (drained and rinsed)

1 English cucumber (quartered)

1 cup grape tomatoes (chopped)

1 large garlic clove (finely minced)

½ cup red onion (chopped)

¼ cup fresh parsley (chopped)

¼ cup fresh mint (chopped)

1 ½ tablespoons extra virgin olive oil

1 medium lemon (juice from)

½ teaspoon kosher salt

Freshly ground black pepper

 

1.             In a large bowl, combine the beans, cucumber, tomatoes, garlic, onion, parsley, and mint.

2.             For the dressing, in a small bowl, whisk the olive oil and lemon juice until smooth and emulsified.

3.             Pour the dressing over the beans and veggies, add ½ teaspoon salt and black pepper to taste and carefully toss with a large metal spoon. Allow to sit at room temperature for 30 minutes so flavors combine or refrigerate to serve later.
